Tortilla de patatas

Hands down my favorite (and easiest) recipe from Spain!
- You’re going to need 4 eggs, oil, salt, and potatoes.
-You fill up a pan with A LOT of oil. A little more than half of the way full.
-Then you take a couple of potatoes (4-5, depending on how big you want it), peel them, and slice them so that they look kind of like potato chip slices. Make sure they’re thin.
-Make sure you sprinkle the slices with salt.
-Then you put them in the boiling oil.
-You’re going to take your spatula and move them around a little bit, but not too much. Just enough so that they don’t stick to the pan and get evenly cooked.
-The potatoes should stick together a bit. That’s how they make the omelet.
-Make sure you flip the potatoes so that they’re evenly cooked on both sides.
-Once they’re nice and brown, you take the potatoes out and put them to the side. (We put them in a drainer over a bowl to extract some of the excess oil… because there is A LOT.
-Now you take about 4 eggs and beat them together in a bowl.
-You then mix together the batted eggs and potatoes in a bowl.
-Smash the potatoes up so that they’re evenly coated in the egg batter. Don’t be afraid to break them apart with the fork.
-You then pour the egg and potato concoction back into the pan.
-Press it down a bit with the spatula.
-Move the sides of the potato and egg in to form a circle… Exactly like you would with an omelete.
-Once it’s hard you pick up the pan, place a plate over the top, and flip it
-Set the pan down, and slide the potato/egg omelet back into the pan to cook the no cooked side.
-Let it cook
-You may want to flip it about 2-3 more times
But when you’re finished, you have a delicious tortilla de patatas!
